Fruit Pancakes
15 February 2021These pancakes are perfect to make together with the kids. They are colourful, easy to make and contain a good amount of fresh fruit.
INGREDIENTS
- 1 punnet of cherries
- 1 punnet of raspberries
- 1 punnet of blueberries
- 200g natural yogurt to serve
FOR THE BATTER
- 290g plain flour
- 60g caster sugar
- 10g baking powder
- 1/4 teaspoon of baking soda
- 380g milk
- 60g natural yogurt
- 60g melted butter
- 5g vanilla extract
- 1 whole egg
METHOD
- Place all of the dry ingredients into a large mixing bowl
- In a separate bowl, whisk all the wet ingredients together and slowly pour into the dry ingredients
- Whisk all together well to form a batter
- Blend half of each punnet of fruit separately and put into small bowls and mix the batter between them
- Cook the pancakes in a frying pan with a small amount of butter for a couple of minutes on each side
- Serve with the remaining fruit, some natural yogurt and a dusting of icing sugar
