• Chocolate Fudge Cake Recipe

    Makes 12 portions

    Prep time – 1 hour 30 minutes

    Equipment needed – 2 x 23cm round sandwich tins, 12 slice cake divider

    INGREDIENTS

    • 200g unsalted butter
    • 80g caster sugar
    • 115g light brown sugar
    • 58ml water
    • 50g cocoa
    • 4 eggs
    • 240g self-raising flour
    • 9g baking powder
    • 50ml whipping cream

    Chocolate fudge

    • 150g unsalted butter
    • 330g icing sugar
    • 45g cocoa
    • 15ml full-fat milk
    • 30g dark chocolate, grated

    Method:

    • Preheat oven to 165C.
    • Cream butter and sugars. Add eggs and beat to emulsify.
    • Make a paste with the water and cocoa.
    • Add the cocoa paste to the creamed mixture then fold in flour and baking powder. Finally, fold in the cream.
    • Pour into two greased and lined 23cm sandwich tins and bake for 30 mins or until cooked. Allow to cool for 5 minutes in the tin before turning out onto a wire rack to cool completely.
    • To make chocolate fudge, beat butter until soft and then add the icing sugar, cocoa and milk to make the icing fluffy and spreadable.
    • To build the cake, pipe half the chocolate fudge on one of the cakes, sandwich with second cake and spread the remaining chocolate fudge on the top. Sprinkle with grated chocolate.
