Chocolate Fudge Cake Recipe

Prep time – 1 hour 30 minutes
Equipment needed – 2 x 23cm round sandwich tins, 12 slice cake divider
INGREDIENTS
- 200g unsalted butter
- 80g caster sugar
- 115g light brown sugar
- 58ml water
- 50g cocoa
- 4 eggs
- 240g self-raising flour
- 9g baking powder
- 50ml whipping cream
Chocolate fudge
- 150g unsalted butter
- 330g icing sugar
- 45g cocoa
- 15ml full-fat milk
- 30g dark chocolate, grated
Method:
- Preheat oven to 165C.
- Cream butter and sugars. Add eggs and beat to emulsify.
- Make a paste with the water and cocoa.
- Add the cocoa paste to the creamed mixture then fold in flour and baking powder. Finally, fold in the cream.
- Pour into two greased and lined 23cm sandwich tins and bake for 30 mins or until cooked. Allow to cool for 5 minutes in the tin before turning out onto a wire rack to cool completely.
- To make chocolate fudge, beat butter until soft and then add the icing sugar, cocoa and milk to make the icing fluffy and spreadable.
- To build the cake, pipe half the chocolate fudge on one of the cakes, sandwich with second cake and spread the remaining chocolate fudge on the top. Sprinkle with grated chocolate.
