There is something truly special about New Year’s Eve at The Portrait Restaurant. At Searcys, we believe memorable celebrations are built on exceptional food, outstanding wine, and genuine hospitality. Every year, our team comes together to create an evening that feels both elegant and personal, and for me, one of the most rewarding parts of the experience is curating the wine journey that accompanies the menu.

Having worked with wine for more than a decade, I have developed a deep appreciation for the heritage, craftsmanship and expertise behind many of France’s most renowned producers. For this year’s New Year’s Eve menu, I wanted to honour those traditions while selecting wines that perfectly complement the flavours and ingredients our chefs have carefully crafted for the occasion.

Creating a wine pairing is about far more than choosing exceptional bottles. It begins with understanding the story behind each wine, the people who produce it, and the role it plays in elevating a dish. In the months leading up to New Year’s Eve, I work closely alongside our suppliers and winemakers, refining selections as the menu evolves to ensure every pairing feels thoughtful and harmonious.

This passion for wine extends beyond the guest experience and into our team culture. At Searcys, we are committed to nurturing talent and sharing knowledge. Over the past year, I have had the pleasure of mentoring one of our supervisors as they work towards becoming an assistant sommelier. Watching their confidence and expertise grow has been incredibly rewarding, and it strengthens our collective ability to deliver an exceptional experience for every guest who joins us.

For me, hospitality is about creating meaningful connections. On New Year’s Eve, every guest should feel welcomed, valued and part of something special. That’s why our team takes the time to introduce each pairing throughout the evening, sharing the stories of the producers, their winemaking philosophies, and the thinking behind every selection. These conversations often become some of the most memorable moments of the night, transforming dinner into an immersive and engaging experience.
