As we begin shaping this year’s festive offering, we took a look inside Head Chef Clifton’s notebook to discover the ideas, ingredients and inspirations influencing our Winter Menu. While the final dishes are still being perfected, they already reflect the warmth, generosity and seasonal flavours that define Christmas celebrations at Searcys.

The Feeling of Christmas
For Chef Clifton, Christmas inspiration starts long before a menu is written. It begins with a feeling.
The crispness of a winter morning. The comforting aroma of a roast slowly cooking. The scent of warming spices. The pleasure of gathering around a table with family, friends or colleagues to share exceptional food and great conversation.
Drawing inspiration from both British and French winter cooking traditions, this year’s menu celebrates the flavours guests know and love, elevated through thoughtful technique and the finest seasonal ingredients.
“Christmas food should still feel like Christmas. We want it to feel warm, generous and familiar, but with a little refinement.”

These three words have become the guiding principles behind the menu.
Each course is designed to take guests on a journey through the season, beginning with lighter, more delicate flavours before progressing towards richer, more indulgent dishes that capture the spirit of festive dining.
Among the notes repeatedly circled throughout Chef Clifton’s sketches and ideas is a simple phrase:

By the time guests arrive at dessert, every element of the menu should feel unmistakably festive, delivering the sense of occasion that makes Christmas celebrations so memorable.

Celebrating the Best of the Season
Winter brings with it some of the year’s most exciting produce, and several ingredients are already appearing regularly in Chef Clifton’s plans.
One ingredient attracting particular attention is Jerusalem artichoke, valued for its earthy, nutty character and its versatility alongside mushrooms, roasted meats and truffle.
Speaking of truffle, the kitchen is exploring thoughtful ways to incorporate its distinctive depth of flavour throughout the menu, enhancing dishes without overpowering them.
And then there is one ingredient that, for Chef Clifton, captures Christmas more than any other. Chestnuts.
Whether they ultimately appear in a savoury course or a festive dessert remains to be seen, but they are firmly on the shortlist.
“For me, the smell and flavour instantly feel like winter and Christmas.”
