Coronation Dishes: Saddle Lamb

Ingredients:
- 3kg Boned lamb saddle
- 2 x chicken breast
- 200ml double cream
- 20g chopped garlic
- 40g chopped shallot
- 10 leaves wild garlic
- 150g chestnut mushrooms
Method:
- Lightly sauté the shallots and garlic in a little sunflower oil, add the mushrooms, cook until soft and chill
- Blend the chicken until smooth, add the cooked mushroom and continue to blend, season and add double cream, blend until the mix resembles a mousse.
- Lay the lamb saddle out flat and trim off any excess fat.
- Spread with the mousse, lay the wild garlic on top and roll.
- Lay the caul fat on a board and place the lamb on top, wrap the saddle and tie with butcher’s string.
- Refrigerate until required.
