Senior Sous Chef – Private Members Restaurant (Monday to Friday)
Searcys are looking for a Senior Sous Chef to lead the team in the private members' restaurant at the Honourable Society of The Inner Temple.
As the Senior Sous Chef, you will work hands on for the operational productivity of the kitchen department and its operating standards. This is a Monday - Friday role.
The Honourable Society of The Inner Temple, situated on the banks of the Thames, is one of the few remaining Georgian style event halls in the City of London. Teamed with its surroundings of a three acre private garden, the Inner Temple is one of Searcys' most exquisite event venues.

Salary: £37,000, plus generous gratuities
As a key member of the kitchen team, the Senior Sous Chef will manage the daily kitchen activities, including overseeing staffing and aiding menu preparation, for the small private members' restaurant.

Key Responsibilities:
- Taking full control of the ordering for all products, HACCP protocols, Health and Safety protocols, and general day to day running of the Back of House kitchen operations.
- Running all elements of the A La Carte plated dishes for lunch and dinner, whilst guiding junior members of the team.
- Creating quarterly seasonal menu rotations, with tastings and staff training.
- Creating regular specials and one -off menus as required as per the marketing diary.
- Planning and costing menus including nutritional and allergenic information.
- To brief all front of house staff on each menu change and daily specials, including any specification changes.
- Controlling each sections food storage area and maintain them to the required standard.
- Actively support the production of new recipe creations, menus and dishes for the Pegasus Restaurant
- Formal culinary training
- Restaurant experience (within a private members establishment, desirable)
- Good foundation of Health and Safety as well as Food Safety
- Level 3 Food Safety Management, via NCASS, or equivalent
- Strong organisational skills
- Self motivated
- Ability to work under pressure during busy periods
